Cut from the shoulder end of the ribeye roll, the chuck eye is sometimes called the "poor man's ribeye," but there's nothing poor about it. It delivers the same rich, beefy flavor and tender, well-marbled texture as its more famous neighbor at a fraction of the price. From cattle raised entirely on pasture at Pure Grass Farm, this is an everyday steak worth getting excited about.

Because our cattle are 100% grass-fed and grass-finished, the fat in our chuck eye is working hard for you, rich in omega-3 fatty acids, conjugated linoleic acid (CLA), and fat-soluble vitamins that grain-fed beef simply can't deliver. The result is a steak with deeper flavor, better nutrition, and the satisfaction of knowing exactly how it was raised.

Why grass-finished changes everything

Grass-finished beef contains significantly higher levels of omega-3s and CLA compared to grain-fed beef. These beneficial fats are stored in the marbling — so every rich, juicy bite of this steak is delivering nutrition alongside incredible flavor. It's a cut that earns its place on the plate in every sense.

How to cook it

Treat it like a ribeye and it will reward you like one. Bring the steak to room temperature, season generously with salt and pepper, then sear over high heat in a cast iron skillet or on a hot grill — about 3–4 minutes per side for medium-rare. Finish with a knob of butter, a smashed garlic clove, and fresh thyme, then let it rest for 5 minutes before slicing. Because grass-fed beef is leaner than grain-fed, pull it just before your target temperature and let carry-over cooking do the rest.
