It is not the same bird as the supermarket one

A pastured chicken grows slower and moves more, so the meat is firmer and the flavor is stronger. The legs and thighs in particular taste like something, where a commodity bird tends to taste like whatever you put on it.

Because it is firmer, it wants slightly gentler cooking than you may be used to. Roast a whole bird a little lower and a little longer, and rest it properly.

Buy the whole bird if you can

It is the best value in the case, it gives you two meals and a carcass, and that carcass makes stock that sets to jelly in the fridge.
