Spring raised, not pond raised

The water comes out of the mountain at a constant temperature and runs straight through the raceways, which is why the fish are clean tasting with none of the muddiness people associate with farmed trout.

Fillets take four or five minutes in a hot pan, skin side down, and nothing more than butter and salt. The smoked trout is ready to eat, and it is excellent on toast with a squeeze of lemon.
