What is mutton, and why it is worth your time

Lamb is under a year old. Mutton is an older sheep, and the extra time on grass gives it a deeper, richer flavor that a lot of the world prefers and most of America has simply never tried. If you have eaten lamb and found it mild, mutton is the fuller version of it.

It is also better value, because American shoppers have been taught to want lamb.

How to cook it

Chops want a hot pan and a short cook, the same as a steak. Leg and shoulder roasts want the opposite: low heat, a few hours, and something acidic in the pot. Ground mutton goes anywhere you would put ground beef, and it is very good in a curry or a shepherd's pie.
